- 1 small pumpkin (about 2-3 pounds)

- 4 cups vegetable broth

- 1/2 teaspoon ground nutmeg

Instructions:


1. Prepare the pumpkin:

- Cut the pumpkin in half and scoop out the seeds and strings. You can save the seeds for roasting later if you like.

- Cut the pumpkin into chunks, leaving the skin on.


2. Sauté the aromatics:

- In a large soup pot, heat the olive oil over medium heat.

- Add the chopped onion, garlic, carrot, and celery. Sauté for about 5 minutes or until they become soft and fragrant.


3. Add the pumpkin and spices:

- Add the pumpkin chunks to the pot and sprinkle in the ground cinnamon and nutmeg.

- Stir well to coat the pumpkin with the spices.


4. Pour in the vegetable broth:

- Pour the vegetable broth into the pot, ensuring that the pumpkin is mostly submerged.

- Use an immersion blender to puree the soup right in the pot until it's smooth and creamy. Alternatively, you can transfer the soup to a blender in batches, but be sure to let it cool slightly before blending, and then reheat afterward.
